🥘 Ingredients

For the Rice:

  • 2 cups basmati rice (soaked for 30 minutes)
  • 4 cups water
  • 1 tsp salt
  • 2 bay leaves
  • 2-3 cloves
  • 2-3 green cardamoms
  • 1 cinnamon stick

For the Biryani Masala

  • 500g chicken/mutton (cut into pieces)
  • 2 onions (thinly sliced)
  • 2 tomatoes (chopped)
  • 1 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • ½ cup plain yogurt
  • 2 tbsp cooking oil or ghee
  • 1 tsp salt (adjust to taste)
  • ½ cup fresh coriander & mint leaves (chopped)
  • 1 tsp saffron (soaked in 2 tbsp warm milk)

Step 1: Cook the Rice

  1. In a pot, boil water and add bay leaves, cloves, cardamoms, cinnamon, and salt.
  2. Add soaked basmati rice and cook until 70% done (the grains should still be firm).
  3. Drain and keep aside.

Step 2: Prepare the Biryani Masala

  1. Heat oil or ghee in a large pan.
  2. Add sliced onions and fry until golden brown.
  3. Add ginger-garlic paste and sauté for a minute.
  4. Add chopped tomatoes and cook until soft and mushy.
  5. Add turmeric, red chili powder, coriander powder, and garam masala. Mix well.
  6. Add chicken/mutton and cook for 10-15 minutes until tender.
  7. Stir in yogurt and cook for another 5 minutes.
