🥘 Ingredients
For the Rice:
- 2 cups basmati rice (soaked for 30 minutes)
- 4 cups water
- 1 tsp salt
- 2 bay leaves
- 2-3 cloves
- 2-3 green cardamoms
- 1 cinnamon stick
For the Biryani Masala
- 500g chicken/mutton (cut into pieces)
- 2 onions (thinly sliced)
- 2 tomatoes (chopped)
- 1 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- 1 tsp coriander powder
- ½ cup plain yogurt
- 2 tbsp cooking oil or ghee
- 1 tsp salt (adjust to taste)
- ½ cup fresh coriander & mint leaves (chopped)
- 1 tsp saffron (soaked in 2 tbsp warm milk)
👨🍳 Cooking Instructions
Step 1: Cook the Rice
- In a pot, boil water and add bay leaves, cloves, cardamoms, cinnamon, and salt.
- Add soaked basmati rice and cook until 70% done (the grains should still be firm).
- Drain and keep aside.
Step 2: Prepare the Biryani Masala
- Heat oil or ghee in a large pan.
- Add sliced onions and fry until golden brown.
- Add ginger-garlic paste and sauté for a minute.
- Add chopped tomatoes and cook until soft and mushy.
- Add turmeric, red chili powder, coriander powder, and garam masala. Mix well.
- Add chicken/mutton and cook for 10-15 minutes until tender.
- Stir in yogurt and cook for another 5 minutes.
Step 3: Layering the Biryani
- In a deep pot, spread a layer of cooked rice.
- Add a layer of the prepared biryani masala.
- Repeat layering until all the rice and masala are used.
- Drizzle saffron milk and garnish with coriander and mint leaves.
Step 4: Dum Cooking (Steaming)
- Cover with a tight lid and cook on low heat for 15-20 minutes.
- Turn off heat and let it rest for 10 minutes before serving.
